    SNEAKY APPLE PIE OATS.
1. Chop up one apple into small cubes and mix with some rolled oats and a splash of water. 
2. Add some cinnamon and natural sweetener and stir through.
3. Pop into a microwaveable bowl or large cup and microwave for 4-5 minutes. 
4. Enjoy! (The apples will become all mushy and the oats will be gooey and sweet! It&#8217;s like eating a healthy apple-pie for brekky!)

    CHOCOLATE ANTIOXIDANTS BREAKFAST QUINOA!

    We all know that chocolate is full of antioxidants, right? Well, here’s a little taste of the goodies contained in unsweetened cocoa powder:

    • Vitamins A, B1, B2, B3, C and E, calcium, copper, iron, zinc, potassium, pantothenic acid, magnesium & manganese.

    Sound good so far? Well what if I told you that today for breakfast I had something that tasted like I was eating a decadent dessert. In fact, I think it tasted like chocolate crackles (those puffed rice and cocoa cupcakes!)

    How to!

    • Cook up a cup of quinoa and mix it with 1 teaspoon of unsweetened cocoa powder AND some natural sweetener to taste. I also added a bit of Ovaltine Lite mix to mine for a little energy kick!
    • Step 2….well there’s no step 2 really! It’s just THAT easy =D

    BLUEBERRY BREAKFAST QUINOA!

    So I finally tried this amazing protein-packed superfood this morning, and WOW - I love it!  I think it tastes like a mild version of buckwheat, except with a totally different texture - so pleasantly poppy and crunchy, but squishy and gooey at the same time! Wow! Now that I have a feel for what this superfood is like, I can develop more recipes around it! It’s funny, because when I first saw quinoa on tumblr, I kept thinking that it was pronounced Quinn-OH-Ah :P And now I actually can’t think of it as KINN-Wah :P

     For the above breakfast meal:

    • Cook 1 small cup of white quinoa with 2 cups of water on the stovetop in a small pan (on low heat) until the water is absorbed. 
    • Put into a cup or bowl and mix with blueberries and a bit of natural sweetener =D

I really felt like eating something sweet and caloric and comforting&#8230;you know those urges you sweet-teeth get? Yep. They&#8217;re deadly! Well, instead I made a little microwave muffin! And this time I added some ripe mashed banana to my buckwheat flour, so it turned out very gooey and moist like a hot mini pudding! It was the PERFECT thing for me and was very low in fat! 
Serves 1Calories - roughly 200-300 (it&#8217;s quite a decent size)
1 ripe mashed banana
1 heaped tablespoon buckwheat flour/wholemeal flour
1 eggwhite
natural sweetener (I used 15 drops Stevia extract)
1/4 teaspoon vanilla essence
1 heaped tablespoon frozen blueberries
splash of water
olive oil
WHAT TO DO!!!!
Grease a wide microwaveable cup with a tiny bit of olive oil.
In a separate cup, mix the remaining ingredients and pour into cup, leaving about 6cm from the rim of the cup (as in, you need room for the pudding to rise!)
Microwave on high for 3-4 minutes until it&#8217;s finished bubbling on the surface and looks cooked. 
Carefully remove from microwave and tip onto a little plate (it will be very hot!)

    Microwave Blueberry Muffin Bun!

    I finally got a microwave installed, so I can now make these yummy muffins in minutes! This one took 3 minutes to cook, which is GREAT! It turned out pretty dense because I used buckwheat flour and I didn’t beat my eggs, but I liked it that way! It was like eating a scone for breakfast, but I used light cottage cheese instead of jam and cream =) Much healthier!

    Serves 1
    Calories - roughly 300-400 (good range for a breakfast!)

    • 1 egg
    • Olive oil
    • 1 tablespoon buckwheat flour
    • 2 tablespoons of rolled oats
    • 1 tablespoon frozen blueberries
    • 15-20 drops Liquid Stevia extract (or any other natural sweetener you like!) *You may think 20 drops is a lot, but I like my muffins very sweet in the morning because it satisfies my craving for sweet things later on in the day!! 
    • 1/4 cup water

    What to do!!

    • Grease a microwaveable cup with a drop of olive oil so that your muffin doesn’t stick to the sides once it’s cooked. 
    • In a separate cup, whisk the egg, then add the flour and stir to form a thick paste. 
    • Add the oats and water (you should now have a gooey mixture which is slightly runny and not too gluggy. If the mixture is too thick and dry, add more water. 
    • Add your sweetener and blueberries and stir! You’re now ready to pour this mixture into your microwaveable cup!
    • Microwave on high for 2-3 minutes. Every microwave tends to be different, but just wait for the muffin to rise a bit and become dry on the outside. 
    • Transfer muffin onto a small plate and let it cool for a few minutes (it will be VERY hot!!)
    • Cut into 2 halves and serve with light cottage cheese or thick natural yoghurt!

    This is my favourite breakfast EVER! Why…?

    Because I am a real sweet-tooth and chocoholic, but this treat really satisfies both of those cravings for the day because it all tastes very chocolatey! I LOVE Ovaltine and it’s not very fattening if you use it in small portions =) I make a coffee with 1tspn instant coffee, 1.5 tspn Ovaltine and about 10 Stevia drops. The night before, I soak a small cup of oats in some water and 1tspn Ovaltine, then pop it in the fridge. The next day, I just add 5 drops of Stevia, and the oats become creamy, chewy, sweet and chocolatey! And it fills me up for so long! Yum yum!

    Fluffy Buckwheat Pancake Biscuits!

    I’m sure I’m not the only one who sometimes (okay, okay - ALL the time) feels like something carby to have with my tea/coffee - like a biscuit or cake or bun or cracker…

    …Well today I tried to make little pancake biscuits which are almost completely free from:

    • Fat
    • Salt
    • Carbs
    • Sugar
    • Gluten
    • Guilt

    They turn out really yummy and are great topped with a bit of thick yoghurt or chopped up fruit. They’re even yummy enough to just dunk into your tea or coffee like you would a biscuit! 

    Here’s how to make 2-3 palm-sized pancake biscuits =)

    • 1/2 tspn baking powder
    • 1/2 cup buckwheat flour
    • 2 eggwhites
    • 12-15 drops liquid Stevia Extract (or anything equal to 5 tspn sugar)
    • fat free cooking spray/olive oil spray
    • *Optional flavourings - 1 tspn unsweetened cocoa powder for chocolatey cookies, 1tspn cinnamon/nutmeg for spiced cookies, few drops vanilla extract for vanilla cookies, 1 tspn lemon/lime zest and juice for citrusy cookies!

    1. In a small bowl, whisk 2 eggwhites until slightly light and fluffy. 
    2. In another bowl, lightly mix the buckwheat flour, baking powder and flavourings - then add to eggwhites.
    3. Combine carefully - don’t beat the heck out of it, otherwise your pancakes won’t be light and fluffy. Mixture should be quite thick and oozy, not thin and runny. 
    4. Add sweetener and combine gently once more.
    5. Pour 1/2 of mixture into a small pan sprayed with (HOT) cooking spray.
    6. Wait until the surface starts to bubble slightly, then flip. 
    7. Repeat with other 1/2 of mixture and you’re done! =) Yum yum!

    Under 100 cals for each pancake =)

    BUCKWHEAT PANCAKES WITH SPICED APPLE AND VANILLA YOGHURT!

    This was my first time making pancakes out of buckwheat flour which I finally found at Coles, and they turned out pretty well! =) They were so delicious and nutty!!!
